Baking Genius

I am a baking genius… that is all. Ok, maybe not. So we had some really old bread in our refrigerator now since my brother’s birthday party. My mom has been meaning to get rid of it but she didn’t want to throw it out. So tonight, I finally went around to making some bread pudding. After reading through a bunch of recipes, I found that I didn’t have the ingredients so I decided to wing it and mix up my special recipe. This was the first time I’ve ever experimented so I was afraid it wasn’t going to come out well.

On the Spot Bread Pudding Recipe

2 cups milk
1 cup granulated sugar
5 eggs
2 dashes of nutmeg
1 can evaporated milk
1/4 cup (1 stick) of  butter
Stale loaves of Italian bread (I used 2 1/2)

Preheat oven to 350 degrees. Place cubed bread in a 13×9 in pan just enough to cover the bottom. In a bowl, beat the eggs. Then add in the nutmeg, sugar, and milk. Mix until well blended. Pour mixture over cubed bread. Bake in the oven for 30 minutes or until set.

In a small saucepan, melt the butter. When butter is melted, pour in the condensed milk. Stir until fairly blended.

Pour butter and condensed milk mixture over the bread pudding. Place bread pudding back in the oven for five minutes.

Serve warm or cold.

  1. That’s what my mom often does when all our bread is just sitting there. It doesn’t look like yours since she adds things like raisins on top.

    And I’m wondering the same thing.. was it any good?
